Vegetarian Kebab Recipe

#MeatFreeMonday is becoming more and more popular around the globe. People are including more vegetables into their diets and there is defo an increase in the number of vegetarians. Restaurants  now have more vegetarian options on their menus considering this new eating trend.
Born into a Hindu family, we abstain from eating meat and meat products for 2 days a week. And one of the days happens to be a Monday. Abstaining from meat is part of our religious beliefs. There are several times in the year when we abstain from eating meat for longer periods of time including 30 days.
Often my friends and family say vegetables are so so boring. I must admit they can be if they are over cooked and cooked in the same way everyday. As my love for cooking developed , I was allowed to cook meals for the family. This meant no curries or a different type of curry. As a food blogger I love reading recipe books and watching cookery shows. All these inspire me to make creative and interesting vegetarian dishes for my family. We are currently fasting for a prayer which lasts 10 days and interesting options are being cooked on a daily basis.
Over the weekend as there was more time mum and I decided to make Green Banana Kebab Chutney. When several people heard the word Banana instantly the image of a bright yellow banana popped into their minds , hence I have said Green Banana. This is a dish I really enjoy eating and making as it is not too difficult to make. Kebabs in any form are a  winner so check out this recipe :
Ingredients ( makes 28/30 kebabs)
6 green bananas boiled and grated
1 finely chopped onion
2 green chillies chopped fine
1/2 a bunch coriander
salt to taste
2 Tablespoons Chilli Bite Mix or Gram Flour
2 Tablespoons of cake flour to sprinkle over the kebabs before frying
100ml of oil to shallow fry the kebabs
Chutney Recipe:
1 tin chopped Tomato and 3 grated tomato
2 teaspoon sugar
1 onion
1 Tablespoon Chilli powder or paprika if you do not want it very hot
Coriander to garnish
Salt to taste
Method :

  1. Boil Bananas and allow to cool before grating.
  2. Prepare the rest of ingredients.
  3. To the grated banana add all the remaining ingredients expect the oil and cake flour.
  4. Mix well and form bite size kebabs ,sprinkle cake flour over before frying.
  5. Shallow fry till Golden brown.
  6. In a saucepan fry onions, add spices and tomatoes and allow to cook for 15min.
  7. Serve the kebabs and chutney separately to prevent the kebabs breaking.

Serving suggestions :

  1. serve with Basmati Rice.
  2. Indian flat bread ie Roti is great to mop up the sauce.
  3. A toss side salad
