Spicy Seafood Chowder Recipe

American Food Shows have really been playing on my mind recently.So on a trip to Mossel Bay I saw seafood chowder on the menu it was a sign to try this.A seafood chowder can best be described as a seafood mix in a creamy thick sauce with potato and sweetcorn.On my very first taste of the chowder my brain went into overdrive on how I would attempt to create a version that would appeal to the South African palate with tons of flavour and this is how my Spicy Seafood Chowder recipe was born.

The main components of a chowder are seafood ,corn and a white sauce with no too many flavourings.I kept thinking garlic ,chillies and lots of butter not forgetting my beloved orange pepper spice.

I used my 30cm deep #OMSPot to cook in as well as a frying pan to fry up my seafood in.Using good quality seafood from Seafood Market ,handchurned butter from The Butter Lady make all the difference in this dish.I used pouring cream so that made the sauce to give the seafood chowder a smooth sauce thank is perfect for dunking the toasted bread in.I adapted the seafood to what is locally available in South Africa, my spicy seafood chowder also included seafood I enjoy.In my spicy chowder I opted for crabsticks ,prawns ,mussels ,salmon and smoked haddock.The masalas I used were all purchased in Gorima’s.

 Spicy Seafood Chowder Recipe

Ingredients

500g mussels steamed in water and 1tsp ginger/garlic paste for 15min.Drain watet and throw away the mussels that have not opened.
1 dozen prawns without the heads but shell on
10 crabsticks cut into bite size pieces
200g smoked haddock cut into bite size pieces
200g salmon cubed ( hake can be used as well)
8 baby potatoes cubed steamed for 5 min

1 large onion sliced
100g Butter
4 cloves garlic
1 tin creamed sweetcorn
1 pkt white onion soup mix
2 TBS Kashmiri Masala
2 TBS Seafood Masala
2 TBS mayo
2 tsp veg seasoning
freshly crushed black pepper
2 cups hot water
2 tsp orange pepper spice
500ml fresh cream
Chopped dhania
2TBS oil

Mussels

Method

1.Toss mayo with 1 TBS Seafood Masala and 1 tsp orange pepper spice.Heat frying pan add butter and mayo mix then prawns cook for 8 min turn over add fish cook for 5min then lastly add crabsticks.Cook for 5 min more then turn off heat.
2.In a large pot add the oil ,onions to cook for 5min before adding the boiled potato to cook for 8min.Add the veggie seasoning and thick white onion soup mix then add two cups of water.

3.Add masalas and allow to cook for 10min before adding the cooked mussels then tin of creamed corn and fresh cream.Lastly add the pan of cooked seafood mix cook for 5min adjust seasoning and chopped dhania.
4.Serve with toasted bread and enjoy.This dish can be served as a starter or main meal.
