Chicken Kalyaa #RECIPE
I often like taking a recipe and adding my own twist to it.For years I have loved a dish my Aunt cooks and whenever she is in Durban I request this dish.Chicken Kalyaa is my requested dish. So what is Chicken Kalyaa ? Prior to my research I knew that the dish was a yoghurt and buttermilk based chicken dish with spices and roasted potatoes.The gravy is very thick and its not to strongly spiced.
My research : I decided to research this dish after I cooked my version of it a few weeks ago.I used 3 Indian cookery books for reference including the famous Indian Delights ,Curry Me Home by Yudhika and The Spice Prince Reza.I also used my trusty BF Google to help me.I found out that this dish was wait for it …. from Mauritius.
As a foodie ,I know that use of yoghurt or Buttermilk in cookery or as a marinade aids in tenderising ,creating a thick a gravy and cooking time is decreased.
Chicken Kalyaa
INGREDIENTS
1kg of Chicken pieces cut up
125ml of yoghurt
3 Tablespoons butter ghee
2 onions 2 small Tomatoes
2 green chillies
2 Tablespoons masala
1 teaspoon sugar
salt to taste
1 sprig of curry leaf
1 teaspoon ginger and garlic
METHOD
1) cut chicken pieces and wash.
2)mix the yoghurt with masala and ginger and garlic together.
3)add chicken to yoghurt mixture,mix well cover and leave to marinade for an hour.
4)Chop onions and fry in butter ghee till golden add curry leaves and green chillies.
5)Add chicken mixture and allow to cook for 20min.
6)Steam potatoes and either fry or oven roast till golden.I added to tumeric and salt before steaming.
7)Add chopped tomatoes to the chicken mix let it cook for 10min then add 2 Tablespoons yoghurt.Lower the heat
8)Fry onions to garnish with,chop up coriander.
9)Turn off the heat garnish with onions,potatoes and chopped coriander.
10)Serve with Naan bread ,Basmatic rice or roti and a Toss salad. This dish was a winner with the family.Am keen to try this recipe with Lamb.
