A simple & quick vegetarian meal
During the month of Purtassi, one tends to run out of ideas for Vegetarian meals.As I child,mum always cooked vegetable curries and it made the month long fast even longer.Besides longer it became so boring.
Since I have started cooking and reading recipe books, I am always keen to experiment and try out new dishes.I love fusion cooking and bring my own twist to Western dishes.
Last week,I prepared this very simple dish and it was a hit with the family.One of the keys to cooking is always a well stocked cupboard and freezer of staple ingredients.My staples include tinned tomatoes , pasta, dried gnoochi, spices, frozen veg and Frys Soya Vegetarian products.
Veg and Potato Bake
Ingredients
Serves 6
1kg frozen mix veg (roasting veg mix)
2 potatoes sliced ( cutting down on carbs try sweet potato instead)
1packet of Cuppa Soup -Country veg variety
3 Tablespoons butter or margarine
2 Tablespoons cake flour
600ml milk
salt and pepper to taste
grated cheese to garnish
Method
- pan fry mix veg with 1 Tablespoon butter for about 10minutes dont overcook as it still has to bake in the oven.
- In a saucepan melt the remaining butter, once melted add the flour and whisk well.Mix for about 2 minutes before adding the milk before and whisk well to prevent lumps.
- Add the packet of soup mix and continue mixing.Keep stirring until the sauce thickens and then remove from heat.
- In an oven proof dish put in the cooked mix veg , place the sliced potato throughout the dish between the veg.
- Pour the sauce over the veg and potato mix.Sprinkle grated cheese and bake for 25 to 30 minutes in the oven.
- While this is baking, pan fry the Frys Schniztels.
And just like that dinner is done.This bake can be served as a side dish or a main meal.
